 Plain yogurt1 Cup (16 tbs)
 Salt To Taste
 Pepper To Taste

Directions

Bake eggplants in preheated hot oven (425 °F.) for about 40 minutes, turning occasionally.
Peel off skin, and discard.
Chop the pulp; add garlic, yogurt, and salt and pepper.
