Eggplant with Yogurt Recipe
Ingredients
| Eggplants | 2 Medium | |
| Garlic | 1 Teaspoon, minced | |
| Plain yogurt | 1 Cup (16 tbs) | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
Bake eggplants in preheated hot oven (425 °F.) for about 40 minutes, turning occasionally.
Peel off skin, and discard.
Chop the pulp; add garlic, yogurt, and salt and pepper.
