Eggplant Tomato Stack Ups Recipe

| 12 slices eggplant, cut 1/2 inch thick | ||

| 6 thick slices tomato | ||
| 6 slices process Swiss cheese, halved | ||
Directions
Sprinkle eggplant with seasoned salt.
In skillet fry eggplant on range top on both sides in butter till nearly tender, about 5 minutes.
Tear off six 6-inch squares of heavy-duty foil; place one eggplant slice on each piece of foil.
Top each with one tomato slice and a half slice cheese; cover with remaining eggplant slices, then remaining cheese.
Seal foil packets loosely.
Grill over medium coals till heated through, 5 to 8 minutes.
