Eggplant Steak Recipe
Ingredients
| 4 fillet or sirloin steaks | ||
| French mustard | 1 Tablespoon | |
| Oil | 2 Tablespoon | |
| 4 slices eggplant, 1 cm thick | ||
| Milk | 1/4 Cup (16 tbs) | |
| Flour | 1/4 Cup (16 tbs), seasoned | |
| 2 tablespoons parsley butter | ||
Directions
Spread steaks with French mustard, and pan fry in hot oil.
Dip eggplant in milk and then in seasoned flour.
Fry until crisp and then drain on brown paper.
Serve steak on slices of eggplant.
Garnish with parsley butter.
