Eggplant Sauteed With Onions Recipe

Ingredients

 
2 tbsp (30 ml) oil
 
1 medium-size egg plant, unpeeled, diced
 
1/2 Cup (125 ml white onion, sliced
 
1/2 Cup (125 ml) red onion, sliced
 
1/4 Cup (60 ml) pearl onions, halved
 
1 garlic clove, finely sliced
 
Salt and pepper
 
2 tsp (10 ml) chopped parsley
 
1/2 tsp (2 ml) chopped basil
 
1/2 Cup (125 ml) tomato juice

Directions

–  In a skillet, heat oil and saute eggplant with white and red onion for approximately 5 minutes, stirring constantly.
–  Add pearl onions and garlic, season with salt and pepper, sprinkle with basil and parsley and stir. Coat mixture with tomato juice and cook over low heat for 3 minutes.
