Eggplant Patties Recipe
Ingredients
| Eggplant | 1 Medium, peeled | |
| 1 1/4 cups coarsely crushed rich round crackers | ||
| 1 1/4 cups shredded sharp American cheese | ||
| Eggs | 2 , beaten | |
| Snipped parsley | 2 Tablespoon | |
| 2 tablespoons sliced green onion | ||
| Garlic | 1 Clove (5gm), minced | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Cooking oil | 2 Tablespoon | |
Directions
In saucepan add eggplant to small amount of boiling water.
Cover; cook till tender, about 5 minutes.
Drain very well and mash.
Mix with crumbs, cheese, eggs, parsley, onion, garlic, salt, and pepper.
Shape into eight 3 inch patties.
In skillet heat oil.
Cook patties till golden, about 3 minutes per side.
