Ingredients

 Eggplant1 Medium, peeled
 1 1/4 cups coarsely crushed rich round crackers
 1 1/4 cups shredded sharp American cheese
 Eggs2 , beaten
 Snipped parsley2 Tablespoon
 2 tablespoons sliced green onion
 Garlic1 Clove (5gm), minced
 Salt1/2 Teaspoon
 Pepper1/8 Teaspoon
 Cooking oil2 Tablespoon

Directions

In saucepan add eggplant to small amount of boiling water.
Cover; cook till tender, about 5 minutes.
Drain very well and mash.
Mix with crumbs, cheese, eggs, parsley, onion, garlic, salt, and pepper.
Shape into eight 3 inch patties.
In skillet heat oil.
Cook patties till golden, about 3 minutes per side.
