Eggplant Parmesan Recipe
Ingredients
1 Medium Eggplant, Peeled And Sliced 1 Cup Stewed Tomatoes 1/4 Cup Bread Crumbs Salt* To Taste Pepper To Taste Oregano To Taste 1/2 Cup Tomato Sauce
3/4 Cup Grated Cheddar Cheese (3 Ounces) 3 Tablespoons Parmesan Cheese
Directions
1. Simmer eggplant in pan of boiling, salted water for 10 minutes. Drain.
2. Preheat oven to 350° F.
3. Layer ingredients in 11/2-quart casserole as follows: one-half
of tomatoes, eggplant, bread crumbs, seasonings, tomato sauce, and cheeses. Repeat layers.
4. Bake, uncovered, for 20 minutes.
