Eggplant Hot Hero Recipe
Ingredients
| 1 1-pound loaf of Italian or French bread | ||
| Eggplant | 1/2 Pound | |
| Salami | 8 Ounce, thinly sliced | |
| Romano cheese | 1/3 Cup (16 tbs), grated | |
| Mozzarella slice | 6 | |
| 3 ounces 2 cups marinara sauce,homemade or jarred (optional) | ||
Directions
1. Preheat oven to 350°. Cut loaf of bread in half lengthwise and remove some of soft center from bottom half.
2. Separate slices of eggplant from casserole into layers no more than 1 inch thick. Arrange salami on bottom half of bread, then top with eggplant. Sprinkle with Romano cheese; top with mozzarella. Replace top half of bread.
3. Wrap in foil and place on baking sheet. Bake until heated through, about 25 minutes.
