Eggplant Cooked In Cheese Sauce Recipe
Ingredients
| Bacon Slices | 4 | |
| Celery | 2 Teaspoon, chopped | |
| 1 medium green pepper, seeded and chopped | ||
| Tomato sauce | 1 Can (10oz) | |
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Parmesan cheese | 1/2 Cup (16 tbs), grated | |
| 6 eggplants (peeled and diced) | ||
Directions
Place bacon on a small baking dish turned upside-down in a medium size baking dish.
Cover with wax paper, heat 6 minutes.
Reserve fat which is produced.
Put celery and green pepper in a casserole.
Add bacon fat, cover and cook 3 minutes.
Put eggplant in the casserole.
Add tomato sauce, salt, pepper and 1 cup water.
Cover and cook 6 minutes.
Sprinkle Parmesan cheese and bacon on top.
Cook uncovered 6 minutes.
