2 cups peeled eggplant, sliced
Salt and pepper
6 ounces cooked, ground veal
1 cup beef bouillon
1 tablespoon dehydrated onion flakes
1 teaspoon Italian seasoning spice
2/3 cup cooked enriched macaroni shells
Directions
Season eggplant with salt and pepper.
Brown under broiler, turning once.
Transfer to individual casserole.
Combine remaining ingredients in a small saucepan, and continue cooking until mixture thickens.
Pour over eggplant in casserole.
Bake at 350° F. for 15 minutes or until thoroughly heated.
