5 egg whites
 
1 yolk
 
1/2c spinach
 
1/2c tomatoes
 
1/2c onion

Directions

Spray non-stick pan with olive oil spray. saute vegetables, till onion is translucent.

Add salt & pepper to taste.

Pour egg whites & yolk over vegetables. Let the eggs set up a little and flip it good!
