Ingredients

 
1 pack chinese egg noodles (which we get in chineseor any asian philipino stores)
 
4 tbsp vegetable oil
 
1/2 finely cut onion
 
1/2 cup chopped vegetables- carrot , cabbage and peas
 
1 handful spring onions finely cut
 
2 eggs
 
6 small pieces of cooked chicken pieces (optional)
 
5 tsp soy sauce
 
1tsp white vinegar
 
1 pinch ajinomotto (optional)
 
1 tsp pepper powder
 
1/2 tsp red chilli sauce
 
1/2 tsp salt more or less

Directions

* In a big pan take 8-10 cups of water put the noodles little salt and 1 spoon oil and boil till noodles is cooked like around 8 mins, drain off the water.

* In the same pan pour oil, onion fry till light brown then add the vegetablee and fry in medium flame for 4 mins.

* add 2 tsp soy sauce, chili sauce, vinegar and ajinomotto, salt, and fry till vegetables are 3/4 th cooked. Then add the cooked egg noodles, 3 tsp soy sauce , pepper powder, cooked chicken pieces (optional) and mix all, if needed add salt.

* Last make the eggs into scrambled eggs and add them too and mix once.

* Egg vegetable noodles is ready.

Pad Thai always uses rice noodles. Pancit uses pancit noodles, chow mein uses Chinese egg noodles. so I am confused by Thaipad? Soy sauce and vinegar sounds like pancit. Shanti/Mary-Anne
