“Gyeranmalyee” (rolled omelette) and “gyeranjjim” (steamed egg) are very basic Korean egg side dishes. Gyeranmalyee is usually used as a side dish for school lunch boxes.

For spicy steamed eggs
 Eggs3
 Soy sauce1 1⁄2 Tablespoon
 Hot pepper flakes2 Teaspoon
 Chives1 , chopped finely (Asian chives)
 Green onion1 Small, chopped finely
 Water1⁄2 Cup (8 tbs)
 Toasted sesame seeds1⁄2 Tablespoon, crushed

Directions

For gye ran mal yee
MAKING
1. In a bowl, break the eggs and add in onion, sugar and ground pepper.
2. In a non-stick pan, heat about 1 teaspoon of oil, tilt the pan to spread the oil.
3. Lower the heat and pour 1/3 of the egg mixture, and spread to make a square.
4. Once the egg starts to cook, fold it from 1 side, wipe the pan if there are any brown bits.
5. Push the egg to 1 side of the pan, pour remaining oil about 3 tablespoon of egg mixture in the empty side of pan and spread to make square.
6. Allow to cook, fold and pat the folded part to make rectangle.
7. Push the egg to 1 side of the pan, pour little more of egg mixture.
8. Repeat until all the egg mixture is used and the cooked mixture forms into rectangle block, do not allow to brown.

SERVING
9. Cut it in ½ thick slices and garnish with tomato wedges.
10. Serve with cooked rice if desired.

For gye ran jjim
MAKING
1. In a microwave proof bowl, put all the ingredients and mix well to combine.
2. Microwave at high for about 5 minutes.

SERVING
3. Serve with cooked rice if desired.

For spicy steamed eggs
MAKING
1. In a microwave proof bowl, put all the ingredients and mix well to combine.
2. Microwave at high for about 5 minutes.

SERVING
3. Serve with cooked rice if desired.

TIPS
Add ham or cooked bacon in the egg mixture before microwaving if desired.
