Egg Salad and Lettuce in Buns Recipe
Ingredients
| Mayonnaise or cooked salad dressing - 1/3 cup | ||
| Sweet gherkins - 2 tablespoons, finely chopped | ||
| Onion | 2 Tablespoon, finely chopped | |
| Parsley | 2 Tablespoon, finely chopped | |
| Juice from sweet gherkins - 1 1/2 tablespoons | ||
| Salt | 1/2 Teaspoon | |
| Prepared mustard | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Hard-cooked eggs - 6, chopped (about 2 1/4 cups) | ||
| Crisp lettuce | ||
| Buns | 4 Large, buttered | |
Directions
MAKING
1) In medium bowl, place mayonnaise, gherkins, onion, parsley, gherkin juice, salt, mustard, and pepper; mix well.
2) Add eggs, mix well until well blended.
SERVING
3) Place lettuce on on portion of bun and spoonful of egg salad.
4) Cover the bun with another portion and serve with ketchup.
