Ingredients

 
Cooked basmati /long grain rice : 1 cup
 
minced garlic : 1 tspn
 
Egg 2
 
mixed chopped vegetable(peas,beans.carrots,corn) : 1/2 cup
 
long sliced onion : 1
 
fresh ground black pepper : 1/2 tspn
 
salt to taste
 
peanut /canola oil : 2 tbspn

Directions

heat 1tbsp oil in a shallow pan or a wok.
add the eggs and cook and scramble it for a minute.
take the scrambeled eggs out of the pan.
now heat the remaining oil in the pan.
add minced garlic ,saute it for a minute.
now add long sliced onion ,cook for a monute or 2.
add the mixed vegetable ,saute it for a minute.
now add cooked rice scrambeled egg,salt and ground black pepper .
mix the whole thing well .let it stand for a minute
serve hot with chili oil and enjoy.
