Egg Fried Rice Recipe
Ingredients
| Rice | 1 Cup (16 tbs) | |
| Eggs | 3 Small | |
| Onions - 1 onion cut into long slits | ||
| Green chillies - 4 slit in the centre | ||
| Oil | 4 Tablespoon | |
| Garlic – ginger paste | 1 Teaspoon | |
| Turmeric powder | 1/2 Teaspoon | |
| Chilli powder | 1 Teaspoon | |
| Salt | To Taste | |
| Mustard | 1/2 Teaspoon | |
| Jeera | 1 Teaspoon | |
| Cinnamon sticks | 2 Medium | |
| Cloves | 4 | |
| Coriander powder/Dhaniya | 1 Teaspoon | |
| Garam masala powder | 1 Teaspoon | |
| Milk | 3 Tablespoon | |
Directions
Cook 1 cup rice separately either in a rice cooker or pressure cooker/open vessel on the stove.
Add Oil in a saucepan, when hot, add mustard seeds & wait until they splutter, then add cumin or jeera. Add cloves & cinnamon sticks. To this, add ginger garlic paste, onions and green chillies and saute until the onions turn golden brown.
Add turmeric, chilli powder and salt.
Add Eggs, Milk and cover for a minute. Scramble the egg.
Add cooked rice to this mixture and remove from flame.
Garnish with coriander and serve hot with raita.
Important - Make sure the cooked rice is not starchy and the rice grains do not stick to each other.

Hi Snigda,
I have just started my cooking lesson through this website. I tried few of your recipe and was successful. Thanks :). Had a doubt with respect to this recipe there is no milk (Qty)mentioned in the ingredients category. ALso can you advice me when to put dhaniya, garam masala, yogurt while cooking. New into cooking ;( appreciate your advice.

Hi Padma,
Adding milk is optional. If you want to, then you may add about 2-3 tablespoons. Adding milk, makes the eggs more fluffy. You can add the dhaniya powder and garam masala once the onions have slightly browned. No need to add yogurt if using milk.
Seems like I added this recipe, when I myself was new to cooking and hence the recipe steps are not very clear. I shall edit the recipe accordingly. Hope this dish turns out well for you!
