Egg Foo Yung Recipe

Ingredients
1 tablespoon unrefined oil
1 1/2 cups bean sprouts
4 egg
2 teaspoons tamari soy sauce
1/4 cup grated onion
Optional:
1/2 cup sauteed chopped celery
1/2 cup mushrooms, finely chopped and sauteed
1 tablespoon unrefined oil for each serving
Directions
Heat a skillet.
Add the oil and sprouts.
Saute the sprouts until just heated through.
Beat the eggs until light.
Add the tamari, onion, and bean sprouts, and other chopped vegetables if desired, and mix well.
Heat 1 tablespoon oil in a 6 inch skillet.
Pour 1/4 cup of the egg mixture into the skillet and brown on both sides.
Repeat until the egg mixture is used up, serve with cooked brown rice.
