Ingredients

 
Chili Powder – 1 teaspoon
 
Green Chili – 3, chopped
 
Onion – 3, chopped
 
Coriander Powder – 1 tablespoon
 
Cumin – 1 teaspoon
 
Cumin Powder – 1 teaspoon
 
Curry Leaves – 3 sprigs
 
Eggs - 10
 
Fenugreek Leaves – 1 teaspoon
 
Ginger Garlic Paste – 1 tablespoon
 
Mustard Seeds – 1 teaspoon
 
Oil – 3 tablespoon
 
Salt - to taste
 
Tamarind Juice – 100 milliliter
 
Turmeric – a pinch

Directions

MAKING
1. Heat oil in a vessel and mustard seeds and let them splutter. Now add methi seeds, cumin and add onions curry leaves and fry Add chopped onions and green chillies and fry till they turn light brown.
2. Add ginger garlic paste.
3. Now add chili powder, turmeric powder, coriander powder and cumin powder, mix well and sauté for few seconds.
4. Add tamarind extract and 2 cups of water and bring to a boil.
5. Add salt and sugar and reduce heat and let it simmer for 10 minutes.
6. Add the boiled and fried eggs and let it cook in the gravy for 3 minutes or till you get the required gravy consistency.
7. Garnish with chopped coriander leaves.
SERVING
8. Serve this hot steamed rice or rotis.
