Ingredients

 
3 rice cooker cups basmati rice
 
4 eggs
 
1 tbsp ghee
 
3 tbsp oil
 
1 bay leaf
 
4 cloves
 
1 small piece cinnamon stick
 
1 cardamon
 
1 tsp somph
 
1/2 lond sliced onion
 
1/2 chopped tomato
 
1 tsp ginger garlic paste
 
a few mint leaves
 
a few corrainder leaves
 
4 green chillies slit in the middle
 
1 tsp chilli powder
 
2 tsp corrainder powder
 
1/4 tsp garam masala powder or pulav masala powder
 
2 cups coconut milk
 
3 cups water
 
salt as needed

Directions

Boil the eggs with a tsp of salt, slit them in sides and keep aside.

In a big heavy bottomed non stick pan por oil and ghee, add bay leaf, cinnamon stick, cardamon, cloves, somph, mint leaves and then onion, green chillies and fry for 2 mins.

Now add 1 tsp ginger garlic paste and fry for 2 mins, then add the tomatoes and fry till it is mashed.

Put the chilli powder and corrainder powder, garam masaa powder, corrainder leaves and fry the eggs in this mixture for 2 mins. Remove the eggs. Now add the coconut milk and water and salt as needed and let it boil, the add the basmati rice.

Close the lid and keep the flame in low heat and cook till the rice is cooked and then add the boiled eggs and stir once and remove.

Tasty egg biryani is ready.

I actually slit the eggs in 3 sides, forgot to mention it.

To make a restaurant style Biryani, try marinading the boiled eggs in yogurt, garam masala, dhaniya powder, salt, chilli powder, turmeric and ginger garlic paste for 20 minutes and then fry them. Also make sure that you make small slits on the sides of the eggs, this will ensure that the masala penetrates the eggs and also the eggs will acquire a beautiful golden color.
