Egg And Olive Canapes Recipe
Ingredients
1/2 cup tree-ripened, pitted olives
6 hard-boiled eggs
3 tablespoons homemade mayonnaise
1 teaspoon fresh lime or lemon juice
Freshly grated black pepper and sea salt to taste
Thin slices of whole wheat bread
Garnish:
Thin slices of pimento
Directions
Mash all ingredients except bread together, until mixture is smooth.
Trim crust from thin slices of whole wheat bread.
Cut each slice of bread into four small squares and toast in a slow oven.
Spread squares with egg and olive mixture; garnish with criss-cross of very thin slices of pimento.
