Egg Surprise Recipe
Ingredients
2 tbsp (30 ml) butter
4 slices of bread
4 eggs
Salt and pepper
4 lettuce leaves
8 cherry tomatoes, cut into 6 wedges each
12 chive stalks
Sprig of parsley
Directions
– Coat both sides of bread slices with 2 tsp (10 ml) butter. With a round cookie cutter, cut a 2-inch (5 cm) circle in the middle of each bread slice. Keep both parts.
– In a skillet, melt rest of butter and cook bread slices and bread circles over low heat. Take out the circles and set aside. Break an egg in the center of each slice. Season with salt and pepper. Gently turn slices and cook other side.
– Garnish individual serving dishes with lettuce leaves. Place egg/bread slices on lettuce leaves and top with browned bread circles. Decorate with cherry tomato wedges. Garnish with chives and parsley.
