Egg Stuffed Cucumbers Recipe
Ingredients
1 English cucumber
2 hard boiled eggs, chopped
3 tbsp mayonnaise
2 tsp chili sauce
1 tbsp parsley, chopped
Salt and pepper
1 tsp pink peppercorns
Directions
Trim ends off cucumber.
Peel or flute cucumber.
Cut into 2 equal sections.
Slice each section in half lengthwise.
With a spoon, scoop out seeds from cucumber sections.
In a bowl, mix remaining ingredients.
With a spoon or pastry bag, pipe egg mixture into cucumbers.
