Egg Stuffed Artichoke Bottoms Recipe
Ingredients
4 hard-boiled eggs, chopped
2 tbsp (30 ml) mayonnaise
12 canned artichoke bottoms
36 capers
36 pink peppercorns
Directions
– In a bowl, mix together hard-boiled eggs and mayonnaise, then spoon mixture into artichoke bottoms. Garnish with capers and pink peppercorns.
