Egg Salad Accordions Recipe
Egg salad accordions is a egg and vegetable salad laid in an attractive pattern. Combined with green pepper and celery, the egg accordian salad is flavored with mayo. Pretty as a presentation, this is one of my favorite salads and very easy to prepare.
Ingredients
| Tomatoes | 4 Medium | |
| 6 hard-cooked eggs, chopped | ||
| Celery | 1/4 Cup (16 tbs), finley chopped | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| 2 tablespoons thinly sliced green onion | ||
| Prepared mustard | 2 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1 Dash | |
| 1/4 cup mayonnaise or salad dressing | ||
| Parsley sprigs | ||
Directions
With stem ends down, cut tomatoes into 6 slices, cutting to, but not through, bases.
Spread slices apart slightly.
Chill tomatoes.
Combine eggs, celery, green pepper, onion, mustard, salt, and pepper.
Stir in mayonnaise; chill.
Sprinkle cut surfaces of tomatoes with salt.
Fill in between slices with egg mixture.
Arrange on lettuce-lined plates.
Garnish with parsley.
