Ingredients

 4 hard-cooked eggs
 Celery1/4 Cup (16 tbs), minced
 Onion1/4 Teaspoon, grated
 Parsley1 Tablespoon, minced
 Crisp lettuce
 Water cress
 Mayonnaise1/2 Cup (16 tbs)

Directions

1. Chop the eggs; mix with the celery, onion and parsley. Blend with mayonnaise.
2. Arrange the salad in mounds on lettuce and water cress.
