Ingredients

 Hard-boiled eggs6 , finely chopped
 1 tablespoon very finely chopped onion
 Parsley1 Tablespoon, chopped
 Anchovy paste1/2 Teaspoon
 Mayonnaise4 Tablespoon
 5/8 cup sour cream or yogurt
 1 x 10 oz. can consomme soup
 Gelatin2 Teaspoon
 Warm water2 Tablespoon
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1) Mix together the onion, eggs, onion, anchovy essence (paste), parsley, yogurt or soured cream, 2/3rd can of the soup and mayonnaise.
2) In the water, dissolve the gelatine.
3) Stir the solution into the egg mixture.
4) Add seasoning to taste.
5) Place the mousse on a serving dish.
6) Chill the mousse.
7) Chill the rest of the consommé as well.
8) When consommé sets like a jelly, chop it.

SERVING
9) Serve the mousse decorated with the chopped consommé.
