Egg Fritters Recipe
Ingredients
| All purpose flour | 1 1/2 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Egg | 1 | |
| Egg yolk | 1 | |
| Light cream | 2/3 Cup (16 tbs), scalded | |
| 12 hard-cooked eggs, chopped | ||
| Onion | 1 Tablespoon, grated | |
| 2 teaspoons finely snipped parsley | ||
| Salt, pepper to taste | ||
| Oil or shortening for deep-fat frying | ||
Directions
Sift flour, baking powder, and salt into a bowl.
Beat whole egg, yolk, and cream together.
Beat in flour mixture gradually, stirring until smooth.
Stir in chopped eggs, onion, parsley, and seasonings; mix gently.
Let stand 5 minutes.
Drop from a teaspoon into 1 inch of hot oil.
Fry until golden on both sides.
Drain.
