1 egg, separated
 
1/4 teaspoon salt
 
1/8 teaspoon freshly grated nutmeg
 
1 tablespoon each freshly grated
 
Parmesan cheese and fine bread crumbs

Directions

Combine egg yolk, seasonings, cheese and bread crumbs.
Beat egg white until stiff but not dry.
Gently fold a small portion of egg white into yolk mixture.
Then fold into remaining egg white.
Drop by tablespoonfuls into broth kept at slow boil Simmer 5 minutes.
