Pastry for one-crust eight-inch pie
 
1 pound spinach, cooked
 
4 eggs
 
1 cup sour cream
 
3/4 cup soft bread crumbs
 
1 tablespoon butter, melted
 
2 tablespoons grated cheese (optional)

Directions

1. Preheat oven to hot (450° F.).
2. Roll the pastry to one-eighth-inch thickness and fit loosely into an eight-inch pie pan. Prick the bottom and sides well with a fork and bake on the lower shelf of the oven until set but not brown, or about five minutes. Remove from oven and lower the temperature to moderate (350° F.).
3. Chop the spinach coarsely and drain well. Spread over the pastry. Break the eggs over the spinach and cover with sour cream
4. Toss the crumbs in the butter and cheese and sprinkle over the top. Return to the oven and bake until the eggs are set, or about fifteen minutes longer.
