Directions

GETTING READY
1. Start by preheating the oven to 450°F degrees


MAKING
2. To prepare a choux pastry, take a saucepan, and in it, pour water and place fat and sugar , then heat it untile the fat melts
3. Once the fat has melted, remove the pan from the heat, and stir in the flour, now place the pan on low heat and cook thoroughly, keep stirring until the mixture is dry and it forms a ball, clean the pan now
4. Again take the pan off from the heat, and add eggs, start beating properly, make sure to beat slowly so that mixture becomes smooth
5. Once the mixture is smooth, take the pan away from the heat and let it cool for sometime.
6. To prepare chocolate or coffee, take a cloth bag, and in it, insert a plain pipe, make sure the diameter of the pipe is 1/2 inch
7. Take choux pastry mixture and fill half the cloth bag
8. On greased baking tins, pipe in narrow strips of mixture onto it
9. Place the into a hot oven and bake for 20-25 minutes
10. Check the eclairs after 15 minutes of baking, if they are borwning quickly, then lower the heat of the oven
11. Once the eclairs have baked completely, take them out from the oven, and let it cool
12. Place the eclairs on a surface, and split them into half, then fill with whipped cream and cover the eclair with coffee or chocolate glace, this is made by blending all the ingredeints together

SERVING
13. Serve with coffee
