Classic Eggless Cakes Recipe

Ingredients
8 oz. flour made into Flaky Pastry
4 oz. currants
1/2 tsp. cinnamon
1/2 oz. melted butter or margarine
1/4 tsp. nutmeg
Grated rind 1 lemon
4 oz. brown sugar
1 oz. chopped peel
Directions
Roll the pastry 1/8- inch (3 mm.) thick and cut in rounds with a 4 inch (10 cm.) cutter.
Mix all the other ingredients together.
Put 2-3 tsp. on each round.
Brush the edges with water and press them together to form a ball.
Turn over and roll the top until the fruit begins to show through.
Gut 3 gashes on top with a sharp knife.
Bake until lightly browned.
