What a great recipie!!! I didn't have any salsa so the only thing I could find in the cupboard that was close was a can of Rotel tomatoes and chilis. Turned out fantastic!! Rotel is only 3 more carbs but worth it! Thanks Amy for a keeper!!!

Hi - this was really good. to make it a bit fancier I put fresh spinach under the fish, did the salsa and then topped fish with a couple of thin slices of lime. I wrapped the fish individually in Parchment (no PAM) and twisted up the ends. when I served it I left it in the parchment but just opened the package on the plates. looked and tasted amazing! served with a big salad. thanks for the idea. (425 for 20 minutes, 4 fillets)

I loved this recipe...But, Amy doesn't mentioned what temperature to put the oven on!!! So, 350 degrees for 20 minutes does not do the trick. I set it for an additional 10 minutes on 425. So, I am guessing 400 degrees for 20 minutes should do the trick next time.
