Baked Salmon With Lemon And Capers Recipe Video

I fell in love with the Lemon Caper Salmon I had at Sofia's Cucina in Little Italy while I was in NYC. I liked it so much, I ate it twice! I told myself that I would figure out a way to modify it so it fit my Eating Low lifestyle. This version is pretty close. You could also grill the salmon and add the lemon, butter spray, and capers as a sauce. p.s. In the second half of this video, you can see a new picture I picked up in NY. It's a fat cat sitting on a scale that says 30 pounds. It reminds me of my obese cat Squeaker and is a good reminder to eat low!

Ingredients

 
Salmon Filet
 
Butter Spray
 
Lemon Juice
 
1 TB capers
 
McCormick Montreal Chicken Seasoning (or spice of your choice)

Directions

Preheat oven to 350 degrees.
Lay a piece of tinfoil on a cookie sheet.
Spray with PAM or butter spray.
Lay a defrosted, rinsed filet of salmon on the tinfoil.
Spray top with butter spray.
Sprinkle with seasoning.
Add 1 TB of capers.
Drizzle with lemon juice.
Fold up tinfoil to make a packet.
Cook for 20 minutes or until fish flakes easily with fork.

Maintenance tip: Use real butter instead of butter spray. Serve over sautéed spinach.

This baked salmon with lemon and capers is definitely drool worthy. Amy had it at a restaurant and it was so good that she had it twice. Here she tries to make it the same way and I would say she got it pretty good. Watch the video to see how simple it can be to make a dish at home, which looks like a big deal in the restaurants.
