Ingredients

* 1 lb ground chicken
* 1 1/2 TB fish sauce (i used oyster sauce)
* 2 TB lime juice
* 3 TB chopped mint
* 3 TB chopped cilantro
* 2 TB chopped shallots
* 2 spring onions, chopped
* 1/2 tsp cayenne pepper
* 1 tsp chili sauce (thai chili sauce - lowest carb you can find)

How to make Eating Low with Amy - Larb

Brown ground chicken in a skillet until cooked.
Add fish sauce and lime juice.
Add cilantro, spring onion, shallots, mint, cayenne, and chili sauce.
Serve over lettuce leaves.
You can add cucumbers or tomatoes too.
Garnish with cilantro.
