Healthy Coconut Chicken Tenders Recipe Video
Crispy coconut replaces the breading in these tenders!
* 1 lb chicken breast tenderloins
* 1 egg
* 1 cup coconut flakes
* 1/4 tsp pepper
* 1/4 tsp garlic powder
* 1/2 tsp salt
* 1/3 cup melted butter
Preheat oven to 400°. Whisk egg in a bowl. In a separate bowl, mix coconut flakes, pepper, salt, and garlic powder. Dip chicken tenderloins in egg and then in the coconut mixture, getting each tender covered in coconut mixture. Place in baking pan. Drizzle melted butter over tenders and bake for 25 minutes or until chicken is done.
