Healthy Chicken Parm A La Kimkins Recipe Video

My friend is visiting from NY and she's italian so we wanted to make an italian meal that we both could eat. This is my compromise meal. I made a eating low-friendly spaghetti sauce that I could put on chicken and she could put on her pasta. This came out really good!

Directions

You can make the sauce ahead of time to save time.
Add tomato sauce, 1/2 can water, 2 spoonfuls tomato paste, packet of splenda, and any italian spices you like to a pot and bring to boil.
Turn heat down and simmer for 1 hour.
Add a thin layer of sauce to a glass baking dish.
Place chicken cutlets in pan on top of sauce.
Spoon some sauce over chicken breasts and add a sprinkle of parmesan.
Bake in a 350 degree oven for 40 minutes (or longer if needed).
You can add more sauce or parm if desired at the end.

It is hard to cook healthy, but it is harder to cook for the health conscious! I just got lucky that I got to watch this low carb, low cal and low fat version of Chicken with pasta and spaghetti sauce by Amy. A very inspirational video to prepare classic dishes in your own kitchen in a very healthy way. Next time when the health freaks visit you, you know what to cook.
