Ingredients

 Watermelon rind1 1/2 Quart, peeled
 Salt3 Tablespoon
 Sugar8 Cup (16 tbs)
 Cider vinegar1 Pint
 Whole Cloves2 Tablespoon
 Allspice2 Tablespoon
 Cinnamon sticks6 3 inch

Directions

"Cut rind in 1-inch cubes.
Soak rind overnight in sah and 1 quart water; drain.
Cover with water; cook until tender.
Drain.
Boil 2 cups water, sugar and vin- egar for 5 minutes.
Tie spices in cheesecloth bag; add to liquid.
Add rind; simmer, stirring frequently, for 45 minutes or until transparent.
Remove bag; seal in hot sterilized jars."
