Ingredients
For the quinoa salad dressing:
1/3 cup lemon oil
Juice from 1 lime
Pinch of sugar
For the quinoa salad:
3 cups cooked quinoa
1/3 cup chopped apricots
1/3 cup dried cranberries
1/3 cup toasted almond slivers
1/3 cup cilantro, chopped
1 tsp spices of choice
For the creamed spinach:
2 tbsp roasted garlic oil
1 ½ tbsp unbleached all purpose flour
3 tbsp garlic gusto seasoning
1 ¼ cups milk
2 lbs baby spinach, rinsed
¼ tsp salt
½ tsp freshly ground ginger
½ cup parmesan cheese, grated
Directions
For the salad:
Whisk the salad dressing ingredients together in a bowl till emulsified.
Combine all the ingredients together in a bowl and toss to coat.
For the creamed spinach:
In a large frying pan, heat oil over medium heat.
Whisk the flour into the oil to make a smooth paste.
Continue whisking and add the garlic seasoning. Cook for 30 seconds more.
Whisk in the milk and cook until the mixture thickens slightly.
Add the green and stir to coat well.
Cover and cook just until tender, about 2-4 minutes.
Season with salt and pepper.
Sprinkle with parmesan cheese and serve hot.
