In a large stock pot, add the onion and sauté them in oil.
Let them sweat a little.
Add carrots and celery, cook 5-7 minutes.
Add garlic gusto and tomato paste.
Add stock and .lentils. Bring to a boil.
Simmer for 20 minutes.
Add mustard and mix with immersion blender.
Add salt and pepper to taste.
