Shrimp Noodle Salad Recipe Video
Super easy almost no cook dinner salad, great for a hot day. Crunchy and yummy shrimp enhanced pasta salad complete with veggies
Ingredients
Dressing:
Olive oil - 1/3 cup
Lime juice - 1/4 cup
Lime zest - 1 teaspoon, grated
Fresh mint - 2 tablespoons, chopped
Fresh ginger - 1 teaspoon, peeled and chopped
Sugar - 1 teaspoon
Salad:
Shrimp - 1 lb, deveined, peeled and cooked (halved, if large)
Snow peas - 8 oz, destringed and cut in half
Radishes - 8, cut into eighths
Green onions - 1/3 cup, chopped
Ramen type noodles - 7 oz (discard seasoning packet)
Baby corn - 1 can, drained and cut in half
Directions
MAKING
1) In a bowl, whisk the dressing ingredients together.
2) Add the baby corns and allow to sit for 30 minutes.
3) Cook the ramen noodles according to package directions, breaking up into small pieces.
4) Combine all the salad ingredients with the dressing and toss to coat them thoroughly.
SERVING
5) Serve the shrimp noodle salad immediately.
