Easy Oven Beef Stew Recipe
This is an easy, hearty meal with a classic home style feel. Just place it in the oven before running errands, or going shopping and see the incredible meal that awaits you when you get home. Great comfort food for those cold winter nights.
Ingredients
| 1 1/2 lbs. [680g] - Stewing beef, cut into 3/4 inch [2cm] cubes | ||
| Olive oil | 1 Teaspoon | |
| Basil | 1/2 Teaspoon | |
| Garlic | 1 Teaspoon, minced | |
| Onion | 1/2 Cup (16 tbs), diced | |
| Sea salt | 1 Pinch | |
| Black pepper | 1 To taste | |
| 4 - med. Potatoes, cubed | ||
| 4 - med. Carrots, cut into bite size pieces or sliced | ||
| 2 - med. Onions, diced | ||
| Celery | 1 Cup (16 tbs), sliced | |
| Mushrooms | 1 Cup (16 tbs), sliced | |
| 1 - Bay leaf | ||
| Garlic | 1 Clove (5gm), finley diced | |
| 10oz. [284ml] - Condensed onion soup | ||
| Low sodium condensed cream of mushroom soup | 10 Ounce | |
| Beef broth | 10 Ounce | |
| Sea salt | 1/2 Teaspoon | |
| Black pepper | 1/8 Teaspoon | |
Directions
Preheat oven 300F [150C]
In a skillet heat olive oil over med. heat.
Add stewing beef.
Allow beef to brown on all sides, about 7 mins.
Add 1/2 cup diced onions, and 1 tsp. minced garlic.
Sprinkle with 1/2 tsp. basil, pinch of sea salt and a little black pepper [to taste].
Simmer over low heat, stirring occasionally , until onions are transparent, about 2 mins.
Place in roaster, and add the next 7 ingredients.
Pour both soups, beef both , 1/2 tsp. sea salt, and 1/8 tsp. black pepper into the same skillet.
Stir together well, loosening all browned bits on the bottom of the skillet.
Pour over stewing beef and vegetables in roaster.
Cover and place in oven.
Bake in 300F [150C] oven for 3 1/2 to 4 hrs,until tender.
