Ingredients

 1 1/2 lbs. [680g] - Stewing beef, cut into 3/4 inch [2cm] cubes
 Olive oil1 Teaspoon
 Basil1/2 Teaspoon
 Garlic1 Teaspoon, minced
 Onion1/2 Cup (16 tbs), diced
 Sea salt1 Pinch
 Black pepper1 To taste
 4 - med. Potatoes, cubed
 4 - med. Carrots, cut into bite size pieces or sliced
 2 - med. Onions, diced
 Celery1 Cup (16 tbs), sliced
 Mushrooms1 Cup (16 tbs), sliced
 1 - Bay leaf
 Garlic1 Clove (5gm), finley diced
 10oz. [284ml] - Condensed onion soup
 Low sodium condensed cream of mushroom soup10 Ounce
 Beef broth10 Ounce
 Sea salt1/2 Teaspoon
 Black pepper1/8 Teaspoon

Directions

Preheat oven 300F [150C]
In a skillet heat olive oil over med. heat.
Add stewing beef.
Allow beef to brown on all sides, about 7 mins.
Add 1/2 cup diced onions, and 1 tsp. minced garlic.
Sprinkle with 1/2 tsp. basil, pinch of sea salt and a little black pepper [to taste].
Simmer over low heat, stirring occasionally , until onions are transparent, about 2 mins.
Place in roaster, and add the next 7 ingredients.

Pour both soups, beef both , 1/2 tsp. sea salt, and 1/8 tsp. black pepper into the same skillet.
Stir together well, loosening all browned bits on the bottom of the skillet.
Pour over stewing beef and vegetables in roaster.
Cover and place in oven.
Bake in 300F [150C] oven for 3 1/2 to 4 hrs,until tender.
