Ingredients
Egg yolks - 3
Condensed milk - 1 can (14 to 15 oz)
Lemon - 5 to 6, freshly squeezed
Graham cracker crust - 1
Egg white - 1, lightly beaten (optional)
Directions
GETTING READY
1) Preheat the oven to 350°F.
2) Optional: Brush the Graham cracker crust with eggwhite and bake in the preheated oven for 5 minutes for a crispier crust.
MAKING
3) Filling: In a bowl, beat the egg yolks and condensed milk together with a hand held mixer for 3 mins until thoroughly blended and thick.
4) Gradually pour in the lemon juice beating constantly.
5) Pour the filling into the Graham cracker crust.
6) Place in the preheated oven on a baking sheet, on the center rack of the oven and bake for 20 to 25 minutes or until the custard is set.
7) Remove from oven and cool on a wire rack for 1 hour.
SERVING
8) Slice the lemon pie into wedges and serve.

I love anything lemony! We have several Meyer Lemon trees and it is almost season again. Normally we have them almost all year round, but last Winter destroyed the crop as we were below 30 deg F for 2 weeks. We also have Ponderosa, Eureka, and Pink Varietated Eureka lemons, but Meyers are our favourite.
Thanks for the easy recipe. I usually mke lemon bars and this is a nice change.
