Ingredients
3 egg yolks
1 (14 - 15 oz) can condensed milk
3/4 cup lemon juice from about 5-6 lemons
1 graham cracker crust
1 lightly beaten egg white (optional)
Directions
Optionally: brush graham cracker crust with eggwhite and bake in a 350 f oven for 5 mins.
this will make for a crispier crust
Make Filling:
Beat egg yolks and condensed milk together with a hand held mixer for 3 mins until
blended and thick. Slowly add lemon juice beating constantly.
Assemble Pie:
Pour filling into graham cracker crust, and bake at 350 F on a baking sheet, on a center rack oven)
for 20-25 mins or until custard is set. Remove from oven and cool on a wire rack for 1 hour.

I love anything lemony! We have several Meyer Lemon trees and it is almost season again. Normally we have them almost all year round, but last Winter destroyed the crop as we were below 30 deg F for 2 weeks. We also have Ponderosa, Eureka, and Pink Varietated Eureka lemons, but Meyers are our favourite.
Thanks for the easy recipe. I usually mke lemon bars and this is a nice change.
