1 medium green bell pepper, chopped
 
1 medium onion, chopped
 
1 cup chopped celery
 
1 cup chopped green onions
 
1 pound boneless skinless chicken
 
1 pound smoked sausage, sliced
 
1 (10 ounce) can onion soup
 
1 (10 ounce) can cream of chicken soup
 
1 (10 ounce) can tomatoes with green chiles
 
2 cups uncooked rice

Directions

Place the bell pepper, onion, celery and green onions in an 8 quart Dutch oven sprayed with nonstick cooking spray.
Saute over medium-low heat until tender.
Rinse the chicken and pat dry; cut into 1 inch-wide strips.
Stir the chicken and sausage into the vegetables; saute until chicken is tender.
Stir in the soups, tomatoes with green chiles and rice.
Bake, covered, at 350 degrees for about 1 hour.
