Easy Chicken And Dumplings Recipe
Ingredients
1 (3- to 4-pound) broiler-fryer
3 quarts water
1 carrot, scraped and sliced
3 stalks celery, sliced
1 medium onion, quartered
3/4 teaspoon salt
1/2 teaspoon pepper
5 (6-inch) flour tortillas, quartered
Directions
Place chicken, water, carrot, celery, and onion in a large Dutch oven, bring to a boil.
Cover, reduce heat, and simmer 1 hour.
Remove chicken, reserving broth, and let cool.
Bone and chop chicken, set aside.
Strain broth to remove vegetables.
Return strained broth and chicken to Dutch oven, and bring to a boil.
Add salt and pepper.
Drop tortilla quarters into broth, one at a time.
Cover and cook 15 minutes.
