If your bread is round, place it in a lightly oiled round dish, if it is oval, use a rectangle dish.
Prepare the syrup by placing the sugar in a heavy pan.
Place over low heat and let the sugar melt until it is golden.
Do not let it burn or it will have a bitter taste.
Wearing gloves for protection, carefully pour the water into the caramel.
Stir until well combined.
Add the rose or orange water.
Pour the syrup over the bread.
Cover and chill. (You can prepare the bread a few days in advance, if you wish.)
When ready to serve whip the ricotta cheese in a food processor and blend in the cream.
Spoon over the chilled bread.
Sprinkle with the nuts.
Cover and chill before serving.
