I got this recipe a few years ago from the owners of a local grocery/convenience store. I would go there often for their delicious plate lunches, boudin and cracklins. I told them I was writing a new cookbook for meals that could be cooked in a rice cooker, namely, "Rice Cooker Meals: Fast Home Cooking for Busy People." It just so happened that a side dish they were serving that day was cooked in her "Hitachi." (She has never called it a rice cooker, it's always "my Hitachi.") She told me how she did it, so I experimented with it in my rice cooker and it came out great the first time. So when I was writing my cookbook "Slow Cooker Meals: Easy Home Cooking for Busy People," I converted the recipe to work in the slow cooker.

Ingredients

 
This savory meal goes well as a side or main dish.
 
3 links (1 lb.) smoked sausage, cut in small pieces
 
1 (2-lb.) bag frozen, crinkle-cut French-fried potatoes, defrosted
 
1 (1-oz.) package onion soup mix, dissolved in 3/4 cup water
 
1 onion, chopped
 
4 cloves garlic, minced
 
Salt, red & black pepper, to taste
 
1/2 stick butter, chopped

Directions

Brown sausage in skillet, drain excess grease. Add all ingredients to slow cooker, stir, cover and cook on HIGH for 3 1/2 hours, or on LOW for 6 or 7 hours.
Makes two quarts. Prep time 15-20 minutes.
