Lightly flour a baking sheet.
Sift together whole wheat flour and unbleached white flour into a large bowl.
Cut up butter and add.
Cut butter into flour with a pastry blender or 2 knives until mixture is coarse and grainy.
Add honey, and work in with floured hands (the dough will be slightly crumbly).
On a floured surface, pat dough into a rectangle about 1/4 inch thick.
Cut into 4 5-inch rounds.
You will have to reroll dough to do this.
Cut rounds into 4 equal pieces.
Score each piece with a sharp knife as shown in the illustration.
Place on prepared baking sheet, and bake on middle shelf of oven for about 20 minutes, or until lightly browned.
