 Peas2 Box, frozen
 Sweet red peppers - 1/2 cup, diced
 Scallions1/4 Cup (16 tbs), finely chopped
 Nonfat mozzarella cheese - 1/4 cup, shredded
 Basil1 Tablespoon, minced
 Nonfat mayonnaise - 1/2 cup
 Dijon Mustard1/2 Teaspoon
 Lettuce - As desired

Directions

MAKING
1) In a large mixing bowl, combine the peas, peppers, scallions, cheese and basil.
2) Meanwhile, in a cup, combine the mayonnaise and mustard.
3) Over the salad in the bowl, pour this mix.

SERVING
4) On a bed of lettuce, serve the salad fresh.
