Easy Paella Recipe

Ingredients

 
1 medium onion, cut into halves and chopped
 
1 large red or green bell pepper, sliced
 
1 clove garlic, minced
 
2 tablespoons vegetable oil
 
1 can (16 ounces) tomatoes with juice, cut up
 
1 package (9 ounces) frozen artichoke hearts, cut into quarters
 
1/2 cup dry white wine
 
1/2 teaspoon dried thyme, crushed
 
1/4 teaspoon salt
 
1/8 teaspoon saffron or turmeric
 
2 cups cooked rice
 
1 cup frozen peas
 
1/2 pound large shrimp, peeled and deveined
 
1 can (6 ounces) Tuna, drained and broken into chunks

Directions

In a large skillet saute onion, bell pepper and garlic in oil for 3 minutes.
Stir in tomatoes with juice, artichoke hearts, wine and seasonings.
Bring to a boil; reduce heat.
Simmer for 10 minutes.
Stir in rice, peas, shrimp and tuna.
Cook for 3 to 5 minutes more or until shrimp turn pink and mixture is heated.
