1/4 cup milk
 
2 tablespoons butter
 
2 eggs, at room temperature
 
1/2 cup honey
 
3/4 cup whole wheat pastry flour
 
3/4 cup unbleached white flour
 
1/2 teaspoon baking powder
 
1/2 teaspoon baking soda (be sure there are no lumps)
 
1/4 cup orange juice
 
1 teaspoon grated orange rind
 
FROSTING
 
2 tablespoons butter
 
2 tablespoons honey
 
2 tablespoons orange juice
 
3/4 cup unsweetened flaked coconut

Directions

Preheat oven to 350°F.
Butter an 8 X 8-inch baking pan.
To make the cake: In a small saucepan, heat together milk and butter just enough to melt butter.
Set aside.
Beat eggs in a large bowl until light and thick.
Beat in honey and then milk mixture.
Stir in whole wheat pastry flour, unbleached white flour, baking powder, and baking soda, blending well.
Stir in orange juice and grated orange rind.
Pour batter into prepared pan, and bake on middle shelf of oven for 25 minutes, or until center of cake springs back when lightly pressed and a cake tester or a food pick inserted into the center comes out clean and dry.
To make the frosting: In a small skillet, melt butter with honey and orange juice.
Mix in coconut.
Spread over hot cake and, place under heated broiler about 1 minute, or until coconut browns lightly.
Watch carefully while broiling.
