Ingredients

 1 jar (6 oz [170 mL]) marinated artichokes, well-drained and finely chopped
 1/2 cup shredded Monterey Jack, Gouda or Cheddar cheese
 Parmesan cheese1/4 Cup (16 tbs), grated
 Light mayonnaise1/4 Cup (16 tbs)
 24 baguette slices, cut 1/3 inch (8 mm) thick, lightly toasted
 Red bell pepper1/4 Cup (16 tbs), finley diced
 8 Kalamata olives, cut into thin slivers

Directions

1. In a bowl combine artichokes, Monterey Jack, Parmesan and mayonnaise. Spread over toasts; top with red pepper and olive slivers.
2. Arrange on a baking sheet; bake for 10 to 12 minutes or until tops are bubbly and edges are golden. Serve warm.
