Easy Artichoke Cheese Melts Recipe
Ingredients
| 1 jar (6 oz [170 mL]) marinated artichokes, well-drained and finely chopped | ||
| 1/2 cup shredded Monterey Jack, Gouda or Cheddar cheese | ||
| Parmesan cheese | 1/4 Cup (16 tbs), grated | |
| Light mayonnaise | 1/4 Cup (16 tbs) | |
| 24 baguette slices, cut 1/3 inch (8 mm) thick, lightly toasted | ||
| Red bell pepper | 1/4 Cup (16 tbs), finley diced | |
| 8 Kalamata olives, cut into thin slivers | ||
Directions
1. In a bowl combine artichokes, Monterey Jack, Parmesan and mayonnaise. Spread over toasts; top with red pepper and olive slivers.
2. Arrange on a baking sheet; bake for 10 to 12 minutes or until tops are bubbly and edges are golden. Serve warm.
